Globe celeriac may be used raw or cooked. It is best to peel celeriac before use, since the outer skin is tough and stringy. It has a lovely celery flavour, so it is perfect used as a flavouring in soups and stews. The celery flavour is less intense than the stalks that can grow out of this root, so enjoy its creamy, nutty and slightly sweet flesh raw in salads.
