Ah...the jacket potato. This variety was made for baking. Take your time over it in an oven, making sure to sprinkle with salt and pepper and a dash of oil for a cripsy skin. Or if you're in a rush, first cook in the microwave until soft, then finish in the oven to get that crispy skin. Enjoy with melting butter, or try any number of fillings from chilli con carne to cheddar and onion.
