Scotch Bonnet chillies are well known for their intense, fiery spice. On the official heat scale for chillies (The Scoville scale), Scotch bonnet score 80,000 to 300,000 or even more! A normal chilli is usually 2,500 to 10,000, making the Scotch bonnet one of the hottest in the world. It originates in the Carribean and gets its name from the traditionally Scottish Hat called the Tam O Shanter.

Their heat is wonderful in Jamaican and Caymanian cooking, and when ripe they also have a unique apricot scent. The colour varies from green to oranges and reds.
