Sugar snap was the first of an entirely new class of pea: the edible-podded snap pea. The succulent pods are similar to mangetout but much plumper. Sugar snap peas are beatifully sweet - both the crisp, tender pods and the plump round peas inside. They are best eaten with some crunch so try them either raw or just lightly cooked.
