Okra is a very special little veggie. The texture varies hugely depending on how you cook it, going from gooey and thick to firm and chunky. Its ridged, green, slighty fuzzy exterior is sometimes known as ladies' fingers (although which ladies have green fuzzy fingers we're not sure...). Inside this unusual pod are rows of edible seeds that release a sticky, glutinous liquid when chopped and cooked. This makes it an excellent thickener for soups and stews, but it can also be served whole as a side dish. The flavour is subtle and so it is often paired with stronger, spicy ingredients.Class I
