The borlotti pods are unmistakable with their hot pink and white specked appearance, inside the beans are white with deep purple stripes. Traditionally from the north of Italy they are used primarily in soups like minestrone and pasta e fagioli. They are excellent cold simply dressed with olive oil, pepper and some thinly sliced red onion.
