With a good mustardy flavour, watercress is seeing somewhat of a revival partly due to the great nutritional qualities it contains. It is delicious regardless, particularly when served with strongly flavoured game meats, or in salads and soups. Its peppery taste and rich green leaves will add bite and colour to many dishes.
