Bok Choi (sometimes spelt Bok Choy) is a beautiful leafy Chinese vegetable with a thick white rib. It belongs to the cabbage family but has a very different flavour. The leaves are soft and tender, best suited to brief stir frying or steaming to retain their mild taste. You can do the same with the succulent stalk.
