With its characteristic aroma reminiscent of anise and licorice, this perennial herb is an amazing addition to your favourite fish dishes, but works just as well with white meats, in particular rabbit and chicken, or as a flavouring for soups.

It's found in the wild in all the Mediterranean area (costal areas especially), but it's also quite common in the UK in hedgerows. Look out for large bushes of bamboo-like stems and yellow umbrella like flowers. The edible part is the feather-like tips.
