Chives are essential in the classic seasoning fines herbes, which is a mixture of equal parts chopped tarragon, chervil, parsley, and chives. This onion flavoured perennial herb can be used in soups, chopped in salads and is especially good in home made cheese. Some people prefer to 'snip' chives with scissors as it avoids possible brusing when chopping with a knife.
