The rich, tangy dark green leaves of Cavolo Nero or black cabbage are simply delicious. Their strong flavour makes them the perfect ingredient in soups such as the classic Tuscan soup, ribolitta. It is also delicious braised with garlic and chillies and served with creamy goat's cheese.
