White asparagus is extremely special. It is much harder to grow than other varieties as it has to stay protected from the sun. The asparagus has to be constantly re-covered with soil so that it grows in darkness, requiring love and care. This ensures a really top quality product, and accounts for its price.

If there is one place where fat is better than thin, it is asparagus-the thicker the spear, the more tender it is likely to be. Other signs of quality are tips that are tight and firm and come to a point and round smooth stalks. The white asparagus is milder in flavor than the green variety, and definitely worth trying!
