Bruscandoli is the name in the Veneto region for shoots from hop. Only available for a short period, these shoots are absolutely exquisite! Similar to wild asparagus, bruscandoli is excellent in risottos or is delicious eaten cold and dressed in lemon juice and extra virgin olive oil.
