The fruit of an evergreen tree native to southern China, it is star shaped and very fragrant. Although the flavour is very aniseedy, it bears no ties with aniseed or fennel. Star anise is widely used throughout Asia where it is one of the ingredients in Indian Garam Masala, is used extetnsively in Chinese, Malaysian, Indonesian and Vietnamese cuisines. Compared to aniseed it is more fruity and spicy, similar to the combination of clove, cinnamon and aniseed. Great for poaching, flavouring savoury stews and tagines as well as for baking.
