Paprika originated in Mexico and Central America, before migrating to Europe - Hungary and Spain being to the foremost producers and consumers. Paprika is central to Hungarian cuisine; no better example than the famous beef stew, goulash. Made by driying red peppers and them grinding them to a fine powder, paprika is used to provide both colour and flavour, and although it can be strong it's never used to add heat like cayenne or chili. Another one of those incredibly versatile spices it is used in sausages to make chorize, it goes well with all sorts of fish and meat stews, eggs, beans, roast potatoes...
