The dried seeds of the coriander plant which primarily growns in southwestern Asia all the way to north Africa. The characteristic flavour of coriander seed is a lemony citrus flavour, nutty and warm which is very different from fresh coriander leaves. Some say there are hints of orange as well. One of Indian cuisine's key ingredients present in Garam Masala and often combined with Cumin, it is just as important in Middle Eastern cuisine, particularly Moroccan. Closer to home coriander seed is a German and South African favourite for seasoning sausages, and is a key ingredient used for pickling vegetables, and can also be present in some Nordic breads.
