Produced using traditional artisan methods by one of Italy's finest rice producing families: Melotti. The grain is mdium and rounded, slightly shorter than Carnaroli variety. It is slightly more versatile than Crnaroli and given its lower price it the preferred risotto rice of our chef clients. Cooking time 16 to 18 minutes.
