Produced using traditional artisan methods by one of Italy's finest rice producing families: Melotti. The grain is long and rounded, considered one of the world's best. By far the preferred rice for risotto as it has the necessary starch and absorption qualities which are essential for an excellent risotto. Cooking time 17 to 19 minutes.In 2008 it was voted 3rd best rice in Italy by a Slow Food tasting panel.
