Capelli d'angelo means 'angel hair' which is quite appropriate as this beautiful pasta is very fine and long. It is disupted to have originated from between the Genoa territory and Neopolitan and Ciociaria area. Broken up it is ideal for broth based recipes or in its long strands with white sauces or melted butter and sage.
