Traditionally a spring vegetable, rhubarb needs warm temperatures to thrive so during the late winter months it must be "forced" or tempted into growing early. By covering the plants and thus raising the temperature it can be harvested in late winter. The results are wonderful bright pink stems, compared to the deep red which we see in spring - this variety is known as Champagne Rhubarb. Prized for this incredible pink colour, it is ideal for one of our absolute favourite puddings, rhubarb jelly. Rhubarb makes deliciously comforting puddings but its sharpness works extremely well with meat and oily fish dishes. Delicious stewed with a little sugar and served with proper whipped cream.
