Traditional saucisson from the suburbs of Lyon. A pure pork saucisson wiht little else added other than salt and pepper. Made with free range pork from local farms, this is a very basic and economical saucisson. Serve as part of a plate of charcuterie and cheese, or sliced with some good butter and cornichons for a rustic sandwich. Champagne is a good pairing as it will cleanse the palate.
