Another great product from prize winning M. Loyatho in Gamarthe. Roughly 50cm long and very thin, this is a classic example of 'saucisse seche' or dry saucisson, and a great one at that. The French prefer their salamis to be on the dry side, and thin salamis reach maturity quicker as they take less time to dry and reach the preferred consistency.We recommend you slice this saucisson at an angle to achieve slices which are larger than you would if cutting straight across. Keep the slices to an average thickness as saucisson is not meant to be a delicate product! Excellent served with a glass of sparkling wine before a meal.
