This fantastic salame is made using select cuts of matured pigs. The meat is very lean and so they mince it together with small bits of lard and freshly ground pepper to produce a sumptuous, soft and flavoursome product. The meat is put in natural casings and cured for 2 months according to the size of the salame. It is hung in cellars to produce a full flavour.
