Lomo Seche is also known in Spanish as Lomo Embuchado, and as Lonza in Italy. We get ours from La Ferme Elizaldia, in the Gamarthe region of the Basque Country. It is made by curing a whole pork loin with salt and spices, among which rich smoked paprika. This indeed is the key ingredient to this outstanding product, renowned for its smoky, sweet and unique flavour.
