Lardo di Colonnata is a testament to Italian savoire faire...only they would dream of curing pork fat - pure and simple. Incredibly it is extremely refined and delicate, with nutty undertones due to its curing in herbs and salt.Lardo needs to be treated with respect, thus serve with little more than bread or crackers as part of a cured meat platter. Fantastic as an aperitif with some dry white wine.
