The Salami from Felino is a product deeply rooted in the old Parma ham and salami making tradition. It is prepared using pork from large, mature native Italian pigs, coarsely minced and blended with salt and peppercorns. Only select cuts of pork are used, with the result that each animal yields just two kilos of Felino salami.Put into hand-knotted sausage skins, the salami is then hung to air-dry, a natural maturation process assisted by the favourable microclimate of Felino. The result is an aged salami which is delicate, sweet, never acid, always tender, and which cuts neatly into compact slices with an even consistency.
