Made by Ferme Elizalda in the Basque country who also make one of the finest Saucissons we've ever tried, this chorizo is of the same exceptionally high quality. Chorizo is made from coarsely chopped pork meat which is seasoned with chili, paprika, garlic and salt, then it is left to air dry for a few months. Chorizo's most distinguishing characteristic, its lovely deep red colour and smokey flavour, is down to the paprika.Excellent as part of a charcuterie platter, or sliced thinly and served in some bread with cheese. This chorizo although dry, can be used for cooking.
