This succulent cured beef is amde with cattle raised in Garfagnana and the Valley of Serchio. Only the finest beef and most tender cuts are used, removed of fat and placed in a basin alternating with layers of meat and layers of a special paste made of salt, pepper, cinnamon, bay leaves, rosemary and other mountain herbs. It is then perfectly aged, producing a fine tasting piece of beef.Antica Norcineria have been producing charcuterie since 1945.
