Lardo is traditionally one of the fattier pieces of charcuterie. Its gleaming, silky white strands are beautifully delicate in flavour. Since ancient times, traditionally these pigs were slaughtered in later autumn and hence had plenty of pork fat. Soaked in brine and combined with a traditional mix of spices create a harmonious and delicate taste.When ready, this version 'Lardo Cuore' is rolled so that the lean center forms the heart ('Cuore' in Italian). Even today, the Triglia family maintain the traditional process, which, together with the beautiful Gombetelli climate gives the Lardo a lovely pink tinge and exceptional softness.
