Apparently created at the beginning of the 16th century by Cistercian monks in Burgundy, it is said that farmer's wives are responsible for its greatness, as they improved on the recipe over generations.Today there is only one producer of Epoisse - Mr. Berthaut - who in 1956 began producing it again bringin it back from the brink of extinction. A much loved cheese throughout the world, it is encased in a wooden box and has a striking red rind which is washed with a local spirit, "Marc de Bourgogne". It has an intense flavour with a slight alcohol taste, and is absolutely delicious. Be mindful it is a smelly cheese.
