Saint-Nectaire is a French cow's milk cheese from Auvergne with a pressed curd and natural rind. This cheese is soft but not flabby and has a musty smell and earthy flavour. This cheese was the CGA Gold Medal Winner in 2005. Saint Nectaire Fermier is produced from the unpasturised milk of the Salers Cows who graze on the mountain pastures of le Puy de Dome. A creamy cheese which is matured for 5 weeks in old vine cellars on a layer of straw.
