This is one of the best mountain cheeses from high in the Ossolano mountains. The flavour is intense with grassy tones and the paste is compact with small holes.It comes from a long history of Ossola Valley cheese, the first being made in alpine huts at the beginning of the first century! The mountains have large open spaces, well protected from winds that appeal to both the animals and alpine hut dwellers. Production is limited to a few hundred cheese every year, made in July and August and transported by donkeys or helicopter.
