Named after the town of Gruyere in Switzerland, it is one of the finest of mountain cheeses, if not the finest. A very large cheese weighing about 80kg, it has a hard brownish rind and very pale-white paste. When young, about 12 months, it is creamy and nutty, becoming with age more assertive, earthy, and incredibly complex. Small salt crystals in the paste are a sign of goiod ageing. A truly phenomenal cheese to be eaten on its own with a glass of mineraly white wine.
