Etivaz is a hard cheese produced by hand in just over a hundred Alpine dairies in Switzerland. It is made over an open fire from May to October and matured for 5 to 13 months. The flavour is characterisically aromatic and fruity, with nutty undertones. It is similar to Gruyere but creamier and less sharp in flavour.
