This 16 month aged Comte has a creamier flavour than the 24 month aged version, is less persistent, beautifully nutty and with lovely grassy notes. Comte cheese is made under strict regulations and graded according to set guidelines. Without passing this test it cannot bear the name of Comte. In summer, it has a lovely fruity taste from the summer cow’s milk. In winter, the Comte cheese takes on a more nutty, caramelized taste.

Comte is sometimes called gruyere Comte because it comes from the same family of Gruyere that is made in the Jura Mountains. This is French Comte, made on the French side, whereas gruyere is made on the Swiss. Comte producers describe their cheese as the king of gruyeres, and at Natoora we couldn’t agree more.
