Vieux Beaufort has been matured to produce a nutty, fruity flavour and smooth buttery paste. It is produced in the Savoie region and made from the milk of cow's who have been grazing at high altitude for the summer months, free from pollution and fertilisers. In particular, the milk comes from the Tarines cows who in accordance with AOC regulations are not fed any fermented fodder.
