Halloumi is a salty (and extremely tasty) Cypriot cheese. This version is made with a mixture of cow's, sheep's, goat's milk and a hint of mint for a full flavour. It has a high melting point so it is perfect for grilling or frying. Delicious in salads with a sharp dressing.
