This soft goat's cheese has a thin crust of ash with specks of blue-grey mould. Inside is a smooth, uniformly white centre with a nutty and lightly salty flavour. Underneath the rind it is slightly runny, tangy, smooth and milky with a robust, sweet taste.It is made in the Loir-et-Cher and has been matured for 3-5 weeks for a full flavour.
