Made with cow's milk, this traditional, creamy, soft cheese can be eaten both matured and young. When eaten young, it's interior is grainy and coarse rather than smooth. The smell of this cheese is not unlike mushrooms and while the rind is bitter, the interior is rather piquant and sharp.
