Made with milk from any animal, many find it surprising that the most famous of blue cheeses, the French Roquefort is made with ewe’s milk. Nonetheless all share a similar production method which creates the characteristic blue veins, and each country has some fantastic examples of quality blue cheese making. In Ireland, near Tipperary they make the wonderful Cashel Blue, a very creamy, slightly spicy blue cheese made with pasteurised cow’s milk. From Italy the Toma Blu is a great example of master cheese making, a mountain style cheese with deepish green veins, creamy and incredibly fruity.
