This wonderful blue cheese is made according to an ancient family recipe. The Vergnol brothers continue the tradition began by their great grandfathers in the early 19th century and continue producing this cheese. It is made from milk of a herd of Montbeliardes cows who graze the alpine fields of the Puy de Sancy. This gives the resulting cheese a balanced and creamy texture.
