Bleu de Brebis is one of those cheeses that speaks more through its flavour, fragrance and texture than its name or origin. Simply called "Ewe's Blue" this is a great example of mountain cheesemaking: rustic, gutsy and incredibly complex. Its flavour is spicy but very very fruity. Unlike other more traditional blues the rind is hard, as it is a classic mountain tome, yet inside it presents a wonderfully creamy paste with greenish-blue veins. A very different blue cheese, which is simply superb.
