Not enough can be said of the Merguez - without a doubt the king of African as well as lamb sausages. Traditionally, they are made using only lamb meat for religious reasons, but Moens add some beef too for extra flavour. They are full of spicy goodness that is evident from their reddish-orange colour. Harissa, the spicy North African chilli sauce is a big ingredient as is paprika, giving the sausage an amazing smoky flavour.

These are excellent grilled quickly and then cut up into small pieces and served to guests before dinner. More traditionally you can serve them up with some couscous.
