A poussin is a young chicken, and has a lovely delicate and tender flavour. All our poussins are free range, and reared in France. Given the higher skin to meat ratio versus full-size chickens the flavours are intensified. This quality spatchock poussin has been split and flattened, making if perfect for the BBQ.
