These free range poussins are reared in France and live wonderful lives outdoors. Given the higher skin to meat ratio versus full-size chickens the flavours are intensified. Excellent roasted whole; simply rub salt and pepper and brush with a little olive oil for a delicously crispy skin. Add any herbs you please, and serve one per person.
