It is difficult to get more elegant pork cut than this, and from our expert butcher it is fantastic quality. With just the right balance of fat and meat it will make a delicious centerpiece for a family meal. As with all our quality pork, this comes from outdoor animals, raised under strict welfare conditions and fed on a purely vegetable diet (no added extras!). You'll see the benefits of this carefully farming in the taste. We suggest that you serve it medium rare, just as the center begins to lose its pinkish hue. Either start it off in a blistering hot oven to get the crackling started and then lower the heat to avoid overcooking, or finish off in the same way (which is the trickier option). Either way it will taste delicious!
