Summer Pepper Sauce

This is perfect for Summer. It tastes great with cold dishes or as a flavoursome dip.

Pepper Sauce

4 Red Peppers
Olive Oil
Salt
Pepper
Chives
125ml Wholemilk Plain Yoghurt

Wash the peppers, blanch quickly in boiling water in order to peel off the skin. Cut in half and remove any seeds and the white ribs, then dice up.

Sautee for 10 minutes in hot olive oil until soft. Then add the water.

Season with salt and pepper and cook for 25 minutes until all water has evaporated. Remove from the stove.

Once cooled, blend with chives and yogurt.

Use as a dip or as a dressing for a cold chicken salad.

Organic Black Peppercorns: Strong and pungent, these are some of the finest you will find on the market.
Organic Pink Peppercorns: Sweet, delicate and pungent at the same time, they beautifully pair with fish but are really a berry!
