Don’t be bitter – Seville Oranges are now in season…

It’s time to whip out the jam pot again – fantastic Seville oranges are now in season and ready to make the most fantastic marmalade. These glorious knobbly oranges have a thick skin and incredibly perfumed zest. Extremely bitter, they are best enjoyed in marmalade, but also used to create flavoured oils, sorbets, and orange curd.
They are only available for a short time so make sure you don’t miss out – buy today!
Red Mullet with Thyme and Orange
2 whole red mullet
1 bunch of thyme
2 oranges
salt and freshly ground black pepper
50g butter
3tbsp white wine
Peel the oranges and slice into segments, reserving any juice. Use one bunch of thyme to stuff the fish, along with some of the orange segments. Surround the fish with the remaining slices of orange and pour over any reserved juice, along with the white wine.
Season the fish with sea salt and ground pepper and dot with butter. Bake at 200C, gas mark 6 for 20-25 minutes until the fish is flaky.
Serve with the orange slices and juice from the dish.
Sanguinello Blood Oranges
Taste: Sweet and juicy with a slightly bitter taste, the Sanguinello orange is less acidic than other orange varieties. The flavour is just beautiful – sweet and with a hint of raspberries. No wonder they are so popular for juicing, creating cocktails, marmalades and even ice cream.

Tarocco Oranges with Leaves
At Natoora, our dedication to the best seasonal produce means that this winter you can enjoy some truly fantastic citrus. This week our Tarocco Oranges with Leaves are at their peak and are well worth trying. They certainly aren’t anything like the oranges you’ll find in the supermarket, but why are they so special?
Taste: It is no surprise that they are one of the most popular oranges in Italy! Now in peak season, they are extremely large, packed with sweetness and plenty of juice.
Region: Our Tarocco oranges are from Sicily, arguably the best orange producing region in the world. These Tarocco are the best of the best, especially when compared with supermarket varieties imported from places such as Morocco and South Africa.
Quality: We only buy the absolute finest grade oranges available in the market.

Orange Cake
All our citrus fruits are tasting amazing at the moment. Now in peak season, our oranges are getting larger and juicier – perfect for this delicious orange cake. You can even try it with clementines or mandarins!
3 eggs
2 large oranges + 1 optional for decoration
200gr sugar
350gr 00 flour
100gr butter
1tsp baking powder
6 tbsp sugar optional for decoration
Icing sugar
Separate the egg yolks from the whites, beat the yolks with the sugar until white and fluffy. Add the strained juice of two oranges and the grated zest of one. All our oranges are unwaxed and untreated but make sure this is the case if buying somewhere else. Sieve the flour a little at the time, trying to avoid lumps, then finally add the melted butter and the baking powder.
Now beat the egg whites until super firm, and carefully add to the mixture.
Pour everything into a baking mould (buttered and dusted with flour) and cook for 30-35 mins at 180*C.
While cooking, you can prepare the decoration if you like. Thinly slice the remaining orange and caramelize the slices in a pan with the sugar.
When the cake is ready, dust with icing sugar and decorate with the caramelised orange slices.
Moro Blood Oranges
The Moro blood orange is an early variety which starts off with a variegated flesh, deep orange with hints of red, and gradually becomes more and more red as the season progresses.
Taste: Sweet and juicy with a slightly bitter taste, these stunning oranges are less acidic than other varieties. The flavour is just beautiful – sweet and with a hint of raspberries. No wonder they are so popular for juicing, creating cocktails, marmalades and even ice cream.
REGION: Our blood oranges are from Sicily, arguably the best orange producing region in the world. The Moro variety are simply outstanding, grown on the rich soil surrounding Mount Etna.
QUALITY: We only buy the absolute finest grade oranges available in the market.
ASPECT: Our blood oranges are fairly small and with a pitted reddish skin. The flesh is an amazingly rich colour and its distinctively dark tones hide intense aromas.

Dorade Fillets in Citrus Sauce
A beautifully fresh way to enjoy this season’s first blood oranges.
6 dorade fillets
4 moro oranges
2 lemons
extra virgin olive oil
a few sprigs of coriander
20gr sugar
salt and black pepper
Rinse 2 oranges and lemons under cold running water, then carefully peel off the zest (try to avoid the white pith).
Put the sugar in a small pot with 200ml of water, and the zests and squeeze in the juice of one lemon and one orange. Cook for 15 minutes until reduced by half, then keep warm.
Warm the oven to 180*C and cover a baking tray with baking paper.
Slice the 2 oranges you have got left in 6 slices each.
Lay the orange slices in pairs, then lay the fillets on them. Season with salt and pepper, and sprinkle with coriander. Drizzle with extra virgin olive oil.
Cover in aluminium foil and cook for 12 minutes. Remove the foil and coriander, and rest for two minutes. Tansfer to the plates and drizzle with the citrus sauce.
Serve with a mixed leaves salad.

Tarocco Nocellara Oranges
Mixed Radicchio
Pumpkin Seeds
First peel the oranges. Slice off the very top and bottom to create flat edges, then run the knife down each side to remove the skin and pith. Segment following the natural lines.
Chop or tear the mixed radicchio. Toss together with the orange segments and some pumpkin seeds.
The juice of the orange should dress the leaves and the sweetness of the oranges will naturally counteract the bitter radicchio leaves. Serve immediately.
Orange and Fennel Salad
All our oranges are tasting superb at the moment and they make a wonderful match the fresh flavours of fennel and red onion…
2 oranges
2 fennels
half red onion
2 anchovies in oil
extra virgin olive oil
salt and pepper
oregano
Thinly slice the washed fennel, dress with a drizzle of balsamic vinegar and leave to marinate on the side.
Thinly slice the red onion and add to the fennel. Divide the orange segments and cut in half. Drain and roughly chop the anchovies. Add everything to the fennel, dress with salt, pepper, oregano and plenty of extra virgin olive oil.
