Purple Carrot Loaf
4 medium eggs
175g light muscovado unrefined cane sugar
160ml sunflower oil
200g self-raising flour
300g purple carrots, grated
1tsp mixed spice
100g flaked almonds
25g Turkish raisins
grated zest of 1 orange
Preheat the oven to 180ºC/350ºF/gas 4 and grease a loaf tin, then line with baking paper.
Now mix the eggs and sugar in a large bowl, whisking until thick and creamy, then gradually add in the sunflower oil. Sieve the flour into the mixture and gently blend together. Add the rest of the ingredients.
Finally, pour the mixture into the prepared tin and bake for 45 to 50 minutes, until firm to touch and golden brown.
For a luxurious finishing touch, ice it with cream cheese mixed with a little icing sugar once cool.

What’s up doc? Carrots de Sable at an incredible price!
French Carrots de Sable – Save when you buy 1kg
Sand isn’t just for sandcastles, well not in France anyway. All along the beautiful coast of La Manche, they use this seaside favourite to grow a very special carrot. Known in France as ‘carottes de sables’ or ’sand carrots’, they are sweet, crunchy and lightly tender. The sandy soil gives the carrots perfect drainage, resulting in a sweeter flavour. They are appreciated by the French (and by everyone at Natoora) as the very best variety of carrot, and are sold with their light sand coating as proof of origin.
They are perfect enjoyed raw as crudites, or roasted to bring out their incredible flavour and sweetness. Try them in our recipe for roasted root vegetables with honey and parsley.

Natoora “French Carrots de Sable” – £3.06/1kg
Roasted Root Vegetables with Honey and Parsley

Serves: 8-10
3 tbsp olive oil
1.5kg carrots de sable, cleaned and halved lengthways
1.5 kg parsnips, trimmed, quartered and cored
3 tbsp honey
1 tsp sesame seeds
3 tbsp chopped fresh parsley
salt and pepper
Preheat the oven to 180C/Gas 4
Place the oil in a large roasting tin and add the carrots and parsnips, tossing until well coated. Season generously.
Roast for 30 minutes, then drizzle over the honey and toss to coat evenly. Roast for another 10 minutes or until the vegetables are completely tender and lightly charred. Sprinkle over the sesame seeds and parsley and toss gently until evenly coated.
Tip the roasted vegetable into a serving dish and place straight on the table!
Chantenay Carrots
Taste: Extremely sweet and with a delicate skin, they don’t need peeling. For their small, interesting shape they also don’t need much trimming or chopping, making a pretty addition to your roast dishes.
Region: As the name suggests, this variety originates from the Chantenay region of France. We get our Chantenay carrots from the Paris market, or from the UK, where they have been grown in recent years with excellent results.
Quality: French Chantenay carrots are bigger and slightly knobbly, while the UK counterparts are usually tiny and very pretty. Both varieties share the same amazing flavour.

Chantenay Carrots with Orange Butter
Serves 6
500g Chantenay carrots, topped and tailed
30g butter
zest and juice of 1/2 orange (or try a mix of bergamot and lemon juice)
12 chopped sage leaves
Mix together the orange zest and sage leaves. You can do this in a pestle and mortar if you have one. Now add the juice and mix with the butter.
Boil the carrots for 5 minutes. They should still be firm but tender.
Drain and return to the saucepan you cooked them in, adding the orange butter. Serve.
