British Cheese Soufflé


Souffle_Cheese250ml béchamel sauce (40g butter, 40g plain flour and 200ml cold milk)
salt and pepper
nutmeg
70g Coolea or another hard British cheese
5 eggs (seperated)

Make a béchamel sauce or use a ready made one. Season with salt, pepper and a pinch of nutmeg and add grated Coolea.

Fold in the egg yolks. Whisk the whites to stiff peaks and fold them in too.

Heat to oven to gas mark 7 (220C). Butter a soufflé mould 8inches in diameter and lightly coat with flour.

Pour in the mixture, turn the oven down to gas mark 6 (200C) and bake for 30 minutes. No matter how good it looks, don’t open the oven door during cooking. When well risen and with a golden-brown colour on top, take out of the oven and serve immediately.

Pappardelle with Roasted Datterini Tomatoes, Taggiasche Olives and Basil

500g Datterini tomatoes
2 garlic cloves, finely sliced
75g Taggiasche olives, stoned
a small bunch of basil
3 tablespoons olive oil
250g fresh papparedelle (or dried egg pappardelle)
75g young pecorino cheese, grated
sea salt and freshly ground black pepper

Cut the tomatoes in half widthways and squeeze out the seeds. Put the tomatoes in a bowl and toss with the garlic, olives, half the basil, torn into small pieces, 2 tablespoons of the olive oil and some salt and pepper. Transfer to a roasting tin or an ovenproof dish and place in an oven preheated to 190C/Gas Mark 5. Roast for 20 minutes; the tomatoes will break up slightly but this is a good thing. Most importantly, their flavour will be concentrated. Remove from the oven and leave to stand for a few minutes.

Cook the pappardelle in a large pan of boiling salted water for 3-4 minutes, until al dente (or cook according to the packet instructions for dried pappardelle). Drain and add to the tomato mixture. Add the remaining tablespoon of olive oil, then rip up the remaining basil and add that too. Toss together until the pasta is coated in the tomato juices. Serve immediately, with the grated pecorino and some black pepper.

What does it do?

The E.G.G. absorbs the ethylene gas emitted by some fruits and vegetables. Ethylene exposure can cause pitting on beans and lettuce, yellowing of broccoli buds, cucumbers and sprouts, and bitterness in carrots.

Eliminating ethylene can reduce premature aging of fruits and vegetables.

The E.G.G. fits easily into your fridge and will lasts for up to 3 months.

How do I use it?

It’s as simple as placing an E.G.G. in the produce bin of your fridge! You should replace the E.G.G. after 90 days.

Can I recycle it?

Yes! You can also refill the egg and use the old contents as fertiliser. Just open the egg, remove the packet inside and put its contents on the soil of your houseplants!

And now for the science…

Some fruits and vegetables produce ethylene, and others absorb it. It is absolutely harmless to humans but can have adverse affects on the taste and appearance of your produce. The E.G.G. helps to reduce spoilage losses by destroying the ethylene trapped in your fridge.

The primary active ingredient is Potassium Permanganate (KMnO4). This is an oxidizer which reacts with the ethylene gas to produce carbon dioxide and manganese dioxide. The manganese dioxide remains in the packet and makes a good soil fertiliser!

The active ingredient in the E.G.G. is approved by the Organic Material Review Institute for use in organic food production.
